Summery regella stir-fry with quinoa

Let's have a healthy vacation

Materials:

A cup and a half of dry quinoa – soaked for about two hours, washed and filtered

2 red peppers cut into cubes

1-2 chopped leeks

Half a thinly sliced ​​hot pepper

1 package Regella, washed and chopped

1/2 package chopped green onion

A handful of chopped parsley/cilantro

A handful of chopped thyme

2 handfuls of natural almonds

Salt

curry

Olive oil

lemon juice

 

The preparation:

Put the washed quinoa in a pot with water (about two cm above the height of the quinoa), bring to a boil, add a teaspoon of curry and salt to taste, reduce, cover and cook until softened (if necessary, add liquid).

 

Meanwhile, heat a large pan, add

a tablespoon of oil and the vegetables in the order of their appearance while mixing,

Salt to taste

Add the almonds and mix,

Cook, stirring occasionally, for a few minutes.

Add the quinoa and mix.

Saute for another minute or two.

Remove from the heat

Sprinkle a little lemon juice and serve.
